Lady Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a bowl, cream the butter and sugar until light and fluffy.

  2. Gradually add the sifted flour, mixing well.

  3. Fold in the whipped egg whites gently.

  4. Add bitter almond extract to taste.

Bake and finish

  1. Pour the batter into square cake tins, not too thin.

  2. Bake until golden and a toothpick comes out clean.

  3. Flavor frosting with vanilla extract.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the batter and helps cream with butter to trap air for a light crumb.
Sifted flour
Provides the structure that sets the cake as the eggs and heat firm it.
Butter
Adds fat for tenderness and flavor, and traps air when creamed with sugar.
Egg whites
Whipped to foam, they add lift and structure to the batter.

The step that matters

Folding in the whipped egg whites gently. Stirring vigorously knocks out the air trapped in the whipped whites, so the cake rises less and bakes up denser.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, flour, butter, egg, almond):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, flour, butter, egg, almond. Candidates are from the same food group and used in at least 100 recipes.
