Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Pressed Beef

Ingredients

Directions

Cook the beef

  1. Cut the beef into pieces and place in a pot with enough water to cover it.

  2. Cover the pot tightly and cook slowly for several hours until the beef is tender and the liquid reduces to 1 cup.

Set the pressed beef

  1. Remove the beef, discard the bone and gristly parts, and chop the meat finely.

  2. Keep the cooking liquid boiling, add the gelatin, then stir in the chopped meat and season with salt and pepper.

  3. Pour the mixture into a deep square pan, place a white board on top, and weigh it down.

  4. If you have leftover cold beef scraps, boil them with a veal shank and add some gelatin.

What each ingredient does

Beef
Provides the meat that becomes the pressed, sliceable body of the dish.
Gelatin
Sets the reduced cooking liquid so the chopped meat holds together when cold.

The step that matters

Pressing the mixture under weight. Weight pressed evenly on the cooled mixture helps the chopped meat and set gelatin bind into a firm block that slices cleanly rather than crumbling.
