Roast Shoulder of Lamb

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Fill the pocket of the boned shoulder of lamb or veal with a dressing made from bread crumbs, minced raw meat, melted butter, chopped parsley, grated onion, salt, and pepper.

  3. In a separate bowl, mix softened butter, chopped parsley, lemon juice, shallots or onion, and beef extract to make the sauce.

Roast and serve

  1. Place the stuffed shoulder in a covered pan and roast in the oven.

  2. Once the meat is cooked, remove it from the oven and spread the sauce over it.

  3. Return the meat to the oven until the sauce is melted, then serve hot.

What each ingredient does

Lamb or veal shoulder
Forms the main body of the dish and carries the stuffing through roasting.
Bread crumbs
Absorb meat juices and fat, giving the stuffing body and a moist texture.
Raw meat
Adds richness and binds the stuffing so it holds together while roasting.
Butter
Adds fat for moisture and flavor in both the stuffing and the sauce.
Beef extract
Adds concentrated savory meaty flavor to the sauce.
Lemon juice
Adds acidity that brightens the rich butter and meat flavors.

The step that matters

Spread the sauce and return the meat to the oven. The sauce must be melted into the meat without overcooking it. Reheating too long dries the lean surface and can scorch the butter and solids, so watch closely until the sauce just melts.

Swap the onion

How well each one fits the dish's main ingredients (lamb, bread, meat, butter, parsley, pepper, sauce):

  1. Shallotfits better
  2. Potatofits better
  3. Capsicumfits better
  4. Onionthe original
