Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that is the main component of the dish.
Flour
Forms a light coating on the slices that helps them brown evenly in the butter.
Butter
Conducts heat for frying and adds richness and browning to the surface.
Mushrooms
Add earthy flavor and moisture to the finished dish.

The step that matters

Browning the dredged slices quickly in hot butter. Hot fat browns the flour coating fast, creating flavor and color before the inside of the slices overcooks and turns dry or tough.
