Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil fresh salmon in salted water for 20 to 30 minutes.

  2. Drain, remove the bones, and break the fish into small pieces.

  3. Make a rich cream gravy equal to the amount of fish.

  4. Pour the gravy over the fish and mix well.

  5. Transfer to a baking dish, sprinkle with bread crumbs, and dot with butter.

  6. Moisten with a little milk and bake at 400°F (200°C) until brown.
