What each ingredient does

Fresh raspberries
The main fruit, supplying the flavour, colour and texture of the preserve.
Sugar
Adds sweetness and, at this high concentration, helps preserve the fruit by limiting spoilage.

The step that matters

Filling with boiling syrup and sealing quickly. Filling the jars to overflowing with boiling syrup drives out air, and sealing right away keeps air from re-entering as the jar cools. Delay lets air in and can let the fruit spoil.
