What each ingredient does

Puff or plain pastry dough
Forms the flaky, layered body of the straws as it is folded and rolled.
Grated cheese
Melts and browns during baking, adding savoury flavour and a crisp golden surface.

The step that matters

Rolling to an even ¼ inch thickness before each fold. Even thickness makes the layers bake at the same rate, so the straws come out uniformly crisp rather than burnt in places or doughy in others.
