What each ingredient does
- Strawberries
- Provide the flavor and most of the juice that forms the base.
- Citric acid
- Adds tartness that brightens the flavor and balances the sugar.
- Sugar
- Adds sweetness and body, balancing the sharp acidity of the juice.
The step that matters
Strain without pressing much. Pressing the strawberries forces fine pulp through the strainer, which makes the juice cloudy. Letting it drip on its own keeps the liquid clearer.
