What each ingredient does

Salmon
Is the main protein, cooked first and then set in the spiced pickling liquid.
Vinegar
Provides the acidity that preserves the fish and gives the pickle its sharp flavour.
Butter
Adds richness and a smooth, rounded mouthfeel to the pickling liquid.

The step that matters

Skimming the boiling pickle. Foam rising from the hot liquid carries impurities and proteins from the fish and spices. Skimming it off keeps the pickle clear and clean-tasting.

Swap the mace

How well each one fits the dish's main ingredients (salmon, vinegar, clove, pepper, allspice, egg, butter):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against salmon, vinegar, clove, pepper, allspice, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
