Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the stew.
Eggs
Thicken the cream mixture gently and give the stew a smooth, rich body.
Cream
Adds richness and a silky texture to the sauce.
Veal stock
Forms the savoury liquid base of the stew.
Butter and flour
Thicken the stock into a sauce with body.

The step that matters

Stirring in the egg and cream mixture. Egg proteins set when heated and will curdle or turn grainy if the mixture boils, so it should only be heated until hot.
