Why it works: Pepper and thyme are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 11,585 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Roast Turkey
Ingredients
Directions
Prepare the turkey
Pluck the turkey and singe it with white paper, then wipe it thoroughly with a cloth.
Draw the turkey, preserving the liver and gizzard without breaking the gall-bag.
Wash the inside well and wipe it dry. Wipe the outside nicely.
Cut off the neck close to the back, leaving enough crop-skin to turn over.
Break the leg-bones below the knee and draw out the strings from the thighs.
Flatten the breast-bone to make it look plump.
Stuff and truss
Prepare the dressing by mixing bread crumbs with butter, pepper, salt, and thyme.
Fill the breast with the dressing and sew the neck over to the back.
Truss the turkey firmly and dredge it lightly with flour.
Place the liver under one wing and the gizzard under the other.
Roast and serve
Melt a piece of butter in a basting ladle and baste the turkey as it cooks.
Roast until nicely browned and serve with brown gravy and bread sauce.
Garnish with fried sausages or force-meat balls if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Turkey
- Forms the main body of the dish, carrying the dressing and cooking as one large roast.
- Bread crumbs
- Absorb the butter and juices in the dressing, giving it a moist, soft texture.
- Butter
- Adds fat and richness, and helps the skin brown while basting.
- Flour
- A light dusting that helps the outer skin brown and crisp during roasting.
The step that matters
Basting while roasting. Basting with melted butter keeps the surface moist and encourages even browning, so the skin does not dry out or scorch before the meat is cooked through.
Swap the thyme
How well each one fits the dish's main ingredients (turkey, bread, butter, pepper, flour, liver, meat):
- Sagefits about as well
- Thymethe original
- Parsleyfits about as well
- Nutmegfits less well
Fit is the average pairing score against turkey, bread, butter, pepper, flour, liver, meat. Candidates are from the same food group and used in at least 100 recipes.
