Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pick the birds immediately and wipe them clean.

  2. Season the birds lightly with pepper and coarse sea salt.

  3. Cut as many slices of bread as you have birds and toast them until brown.

  4. Butter the toasted bread and lay it in a pan.

  5. Dredge the birds with flour and place them in the oven at 400°F (200°C).

  6. Baste the birds with lard or fresh butter while roasting.

  7. Roast for 20 to 30 minutes until done.

  8. Serve the birds on the toast, garnished with sliced orange or orange jelly.
