What each ingredient does

Eggs
Egg whites set in the hot water, forming the soft poached centre on the toast.
Toasted bread
Crisp, absorbent base that holds the poached egg and adds a contrasting texture.

The step that matters

Slide the eggs gently into the boiling water. Dropping eggs in roughly, or letting the water roll hard, tears the whites apart. Gentle entry lets the white coagulate around the yolk so the egg keeps a compact shape.
