Why it works: Tomato and pepper are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,923 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the tomatoes and cut a piece from the stem end, about the size of a quarter.

  2. Add ¼ teaspoon of coarse sea salt, ⅛ teaspoon of black pepper, and 1 tablespoon of butter to each tomato.

Bake

  1. Place the tomatoes in a dish or pan and bake in a 350°F (175°C) oven for nearly one hour.
