Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coral and spawn
Provides the rich lobster flavour and the colour of the sauce.
Sweet butter
Adds fat and richness, giving the sauce a smooth, silky body.
Made mustard
Adds a sharp, tangy note that balances the richness of the butter.

The step that matters

Stir the coral and spawn into the melted butter until smooth. Butter and water or vinegar separate easily if left to stand, so the sauce must be stirred constantly and kept warm. Lumps of pounded coral will remain if it is not mixed thoroughly, and overheating can cause the emulsion to break.

Swap the mustard

How well each one fits the dish's main ingredients (lobster, butter, vinegar, pepper, meat):

  1. Mustardthe original
  2. Capsicumfits about as well
  3. Shallotfits less well
  4. Potatofits less well

Fit is the average pairing score against lobster, butter, vinegar, pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
