What each ingredient does

Egg yolks
Their fat and emulsifying lecithin help bind the mashed yolks into a smooth dressing.
Olive oil or melted butter
Adds fat that gives the dressing a smooth, rich mouthfeel.
Lettuce
Forms the base of the salad that the dressing coats.

The step that matters

Mix in the oil or butter until smooth. Fat must be worked into the mashed yolks gradually so they emulsify. Adding it too fast can break the mixture, leaving it greasy and separated rather than smooth.

Swap the mustard

How well each one fits the dish's main ingredients (egg, olive, lettuce):

  1. Spinachfits better
  2. Cucumberfits about as well
  3. Chivefits about as well
  4. Mustardthe original

Fit is the average pairing score against egg, olive, lettuce. Candidates are from the same food group and used in at least 100 recipes.
