Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Provides the crisp, sturdy texture that holds up to the pickling liquid.
Vinegar
Adds the sharp acidity that makes the cabbage taste pickled and helps preserve it.
Coarse sea salt
Draws water out of the cabbage, leaving it firmer and less watery.

The step that matters

Salting the cabbage for 48 hours. Salt draws water out of the cabbage through osmosis. Enough salt and time let the slices release their liquid, which keeps the final pickle crisp rather than soggy and diluted. Drain the liquid that forms before adding the vinegar.

Swap the ginger

How well each one fits the dish's main ingredients (cabbage, vinegar, pepper):

  1. Dillfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Gingerthe original

Fit is the average pairing score against cabbage, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
