Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the relish and absorb the brine and vinegar as they cook.
Cabbage
Adds body and crunch that holds its texture through long simmering.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
White mustard seed
Contributes sharp, pungent flavour that mellows during long cooking.
Vinegar
Acidifies the mixture, preserving the vegetables and giving the relish its tang.

The step that matters

Squeeze out the brine before chopping. Salt brine left in the tomatoes and vegetables would make the relish overly salty after hours of boiling, and excess water would dilute the vinegar and slow the cook down.
