Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the basin

  1. Preheat the oven to 400°F (200°C).

  2. Rub the bottom and sides of a basin with a bit of butter.

  3. Line the basin with the sliced bread or rolls.

Fill and assemble

  1. Peel and cut the tart apples into small pieces, filling the basin nearly full.

  2. Sprinkle bits of butter and sugar between the apple layers.

  3. Grate nutmeg over the apples.

  4. Soak additional slices of bread or roll to cover the apples.

  5. Place a plate and a weight on top to keep the bread pressed down.

Bake and serve

  1. Bake for 2 hours, then turn it out onto a serving dish.

What each ingredient does

Bread or rolls
Forms the outer shell that holds the apples and keeps their shape while baking.
Tart apples
Provide the main filling, with moisture and acidity that soften into a tender, flavorful layer.
Butter
Adds richness and fat, helping the bread brown and carry flavor through the dish.
Sugar
Adds sweetness and helps the apples caramelize slightly as they bake.
Nutmeg
Adds warm, aromatic flavor that complements the apples.

The step that matters

Pressing the bread down with a weight. The weight keeps the bread in firm contact with the apples and basin, so the charlotte holds its shape when turned out instead of collapsing into loose pieces.
