Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Preserve Citron

Ingredients

Directions

Prepare the citron

  1. Pare the citrons and cut them into 1.5-inch thick slices, then into strips of the same thickness.

  2. Remove all seeds with a small knife and weigh the citron.

Make the syrup

  1. For each pound of citron, add a pound of white sugar to make a syrup.

  2. In a pot, combine 1 pint of water with the sugar and simmer gently for 20 minutes.

Cook the citron

  1. Add the citron to the syrup and boil for 1 hour or until tender.

  2. Before removing from heat, add the sliced lemons and ginger.

  3. Do not boil long after adding the lemon and ginger, and do not stir while boiling.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

What each ingredient does

Citron
Forms the main body of the preserve, becoming tender and translucent as it absorbs the sugar syrup.
White sugar
Sweetens the preserve and, at high concentration, helps preserve the fruit and give it a syrupy texture.
Lemons
Add acidity and bright citrus aroma that balance the sweetness of the syrup.
Root ginger
Adds a warm, spicy aroma to the syrup and the citron.

The step that matters

Adding the lemon and ginger at the end. Long boiling after the lemon and ginger go in dulls their fresh aroma and flavor and can break down the slices. Stirring while boiling can also tear the tender citron and cloud the syrup.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
