The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ices and lowers the freezing point so they stay soft and scoopable.
Egg whites
Whipped to a stiff froth, they add air and a light, airy texture to the ices.
Orange or lemon juice
Provides the main citrus flavour and acidity.
Oranges
Their grated rind is steeped in water to add aromatic oil and flavour.

The step that matters

Adding the beaten egg whites. The mixture must be only half frozen first. If it is too firm, the whites cannot be folded in evenly, and if it is too liquid, the froth collapses and the ice loses its airy texture.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
