What each ingredient does

Green tea
Provides the main flavour and the caffeine-driven strength of the infusion.
Water
Extracts flavour from the leaves and forms the entire drink.

The step that matters

Pour about ½ cup of boiling water over the tea. Green tea leaves are delicate and scorch easily, and water that is too hot or steeped too long turns the brew bitter. Using just-boiled water and a short steep keeps the flavour smooth.
