What each ingredient does
- Lobster coral and spawn
- Provides the rich colour and concentrated lobster flavour that defines the sauce.
- Butter
- Adds richness and fat, giving the sauce a smooth, silky body.
- Water or vinegar
- Thins the melted butter, and vinegar adds sharpness that balances the richness.
- Made mustard
- Adds sharp flavour and helps bind the butter and coral into a stable sauce.
The step that matters
Stirring the coral into the melted butter. Butter and water separate easily, so the coral must be stirred in thoroughly. Mustard helps emulsify the mixture, and stirring until smooth keeps the sauce from splitting and gives an even texture.
