Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Jellied Chicken
Ingredients
Directions
Cook the chicken
Cook the chickens in a small amount of water until the meat easily separates from the bone.
Season with salt and pepper.
Once cool enough to handle, remove bones and skin.
Set in gelatine
Place the meat, including gizzard, liver, and heart, in a deep pan or mold until nearly full.
In the remaining water, dissolve the gelatine in a little warm water and boil until reduced to just under 1 quart.
Pour the gelatine mixture over the chicken in the mold and let it cool.
Cut with a very sharp knife and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chickens
- Provide the meat and cooking liquid that form the body of the dish.
- Gelatine
- Sets the cooking liquid into a firm jelly that holds the meat together when cut.
The step that matters
Reducing the gelatine mixture to just under 1 quart. Gelatine only sets firmly at the right concentration. Too much water leaves the jelly soft and loose, while boiling it down concentrates the gelatine so it can hold its shape when chilled.
Swap the lemon
The recipe marks lemon as optional. How well each one fits the dish's main ingredients (chicken, pepper):
- Lemonthe original
- Limefits about as well
- Mangofits less well
- Grapefits less well
Fit is the average pairing score against chicken, pepper. Candidates are from the same food group and used in at least 100 recipes.
