Lettuce

Ingredients

Directions

Prepare the lettuce

  1. Wash each lettuce leaf separately and place in cold water.

  2. Set the lettuce on ice or in a cool cellar for at least 1 hour.

  3. Dry the leaves with a soft towel and tear into pieces with a silver fork.

Make the dressing

  1. For dressing, mix equal parts lemon juice and sugar, diluted with a little ice water.

  2. Alternatively, mix 3-4 tablespoons of thin cream with 1 teaspoon of sugar.

  3. If desired, add a little lemon juice to the cream dressing to thicken it slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lettuce leaves
Make up the salad itself; cold water and chilling keep the leaves crisp and firm.
Lemon juice
Adds acidity that brightens the dressing and balances the sugar.
Sugar
Adds sweetness that softens the sharpness of the lemon juice or cream.
Thin cream
Adds fat and richness, giving the cream dressing a smooth, coating texture.

The step that matters

Dry the leaves and tear them gently. Water left on the leaves dilutes the dressing so it slides off instead of clinging. Cut or bruised edges brown quickly, so tearing by hand with a fork and drying carefully keeps the salad fresh-looking.

Swap the lettuce

How well each one fits the dish's main ingredients (lemon, sugar, cream):

  1. Arrowrootfits better
  2. Leekfits better
  3. Spinachfits better
  4. Lettucethe original

Fit is the average pairing score against lemon, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
