What each ingredient does

Egg white
Its proteins coagulate when heated and trap suspended impurities so they can be skimmed or settled out.

The step that matters

Boil until impurities separate. Heat must be high enough to coagulate the egg white proteins, which bind cloudy particles into a raft. If the mixture is not brought to a proper boil, the particles will not be captured and the syrup stays cloudy. Skimming or straining the raft afterward removes what the egg white has trapped.
