Gooseberry Fool

Ingredients

Directions

Prepare

  1. Stew gooseberries until they form a thick pulp, sweeten to taste, and strain through a sieve if desired.

  2. Whip the same quantity of cream as gooseberry pulp until fluffy.

  3. Dissolve gelatine in milk as directed for whipped cream, using 2 tablespoons of gelatine for every quart of whipped cream.

Assemble and chill

  1. Reserve one-fourth of the whipped cream.

  2. Gently fold the gooseberry pulp into the remaining whipped cream.

  3. Spoon the mixture into custard glasses.

  4. Top each glass with the reserved whipped cream.

  5. Chill in the refrigerator until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gooseberries
Provide the tart fruit flavour and the pulp that gives the fool its body.
Heavy cream
Whipped to hold air, giving the fool its light, airy texture.
Gelatine
Sets the mixture so it holds its shape when chilled.
Sugar
Sweetens the tart gooseberry pulp.

The step that matters

Gently fold the gooseberry pulp into the whipped cream. Whipped cream gets its lightness from air bubbles held in the fat network. Vigorous stirring knocks that air out, so the fool turns dense and heavy. Fold slowly, lifting from the bottom, until no streaks remain.
