Corned Beef, Boiled

Ingredients

Directions

Prepare the beef

  1. If the beef is very salty, soak it overnight; otherwise, wash off the salt and cover it with cold water.

  2. Simmer the corned beef for 4 to 6 hours, depending on the size, without boiling.

  3. If serving cold, let the meat cool in the cooking liquid.

  4. For tough beef, leave it in the liquid until the next day and bring it to a boil before serving.

Shape and set

  1. Simmer until the bones are easily removed, then fold the meat into a square or oblong shape.

  2. Press the meat with a weight until it cools to form a solid piece for slicing.

  3. Boil down the cooking liquid, remove the fat, and season with pepper or sweet herbs.

  4. Pour the seasoned liquid over finely minced beef scraps and press into a mold.

  5. Cover with a weight and refrigerate until set.

Serve

  1. Garnish with parsley or celery and serve with pickles or mustard.

What each ingredient does

Corned beef
Is the main meat, cooked slowly until tender enough to slice.
Cold water
Covers the beef and forms the cooking liquid that later becomes a seasoned jelly.

The step that matters

Simmer without boiling. A gentle simmer keeps the meat tender and moist. A rolling boil toughens muscle fibers and can make the beef stringy and dry.

Swap the mustard

How well each one fits the dish's main ingredients (beef, pepper, parsley):

  1. Carrotfits better
  2. Capsicumfits better
  3. Potatofits better
