Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and roast

  1. Beat the roast thoroughly all over and place it in a roasting dish.

  2. Baste the roast with melted butter.

  3. Put the roast in a preheated oven at 400°F (200°C) and baste frequently with its own fat.

  4. If the gravy becomes too brown, add a glass of boiling water to the bottom of the pan.

  5. Repeat adding boiling water as needed while cooking.

  6. Cook for nearly two hours until the outside is brown and the inside is red and juicy.

Season and serve

  1. Season with coarse sea salt and black pepper.

  2. Serve with brown gravy and garnish with sliced lemons.

What each ingredient does

Beef roast
Provides the main meat, which becomes tender and juicy as its connective tissue softens during roasting.
Melted butter
Adds fat that promotes browning on the outside of the roast and carries flavor.
Boiling water
Loosens browned bits from the pan and thins the gravy while keeping it from scorching.

The step that matters

Basting with the roast's own fat. Regular basting keeps the surface moist and helps it brown evenly, while adding boiling water when the gravy darkens too fast prevents scorching and bitterness.
