Why it works: Watercress and sorrel share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Mushrooms and Salad-plants

Ingredients

Directions

  1. Wash young mushrooms and serve them uncooked in a salad.

  2. Combine watercress, dandelion leaves, sorrel, chicory, escarole, corn-salad, and lettuce for a fresh salad.

  3. Plant chives in a pot for repeated use throughout the season.

  4. Blanch dandelion plants by covering them with earth for two weeks to make the leaves sweet and tender.

  5. Grow mustard and garden-cress seeds in a window box for salad greens.

  6. Wash young beet leaves and serve them with French dressing, either alone or with lettuce.

  7. For larger beet leaves, cook them in salted boiling water until tender, then drain and serve hot with salt, pepper, butter, and vinegar, or cold with plain French dressing.
