Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken and enrich the sauce, while beaten whites add lightness and airy volume.
Powdered sugar
Sweetens the sauce and helps the yolks become frothy and smooth when beaten.
Rum
Adds the main alcoholic flavour to the sauce.

The step that matters

Fold the yolk mixture into the whites quickly and gently. Beaten egg whites are a foam held up by trapped air. Vigorous or prolonged stirring knocks out that air, so the sauce turns dense and loses its lightness.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, rum):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against egg, sugar, rum. Candidates are from the same food group and used in at least 100 recipes.
