What each ingredient does

Ripe tomatoes
Provide the main body, moisture and flavour of the ketchup.
Cider vinegar
Adds acidity that gives the ketchup its sharp tang and helps preserve it.
Cloves
Add warm, aromatic spice flavour to the tomato base.
Black pepper
Adds sharp, aromatic heat to the tomato base.
Nutmeg
Adds warm, sweet aroma to the tomato base.

The step that matters

Strain thoroughly to remove seeds. Seeds and fibrous pulp left in the tomatoes would make the ketchup gritty and uneven in texture. Thorough straining gives a smooth, uniform sauce.

Swap the tomato

How well each one fits the dish's main ingredients (clove, pepper, nutmeg, cider, vinegar):

  1. Capsicumfits better
  2. Mustardfits better
  3. Shallotfits better
  4. Tomatothe original
