What each ingredient does

Cooked fish
Provides the main body and flavour of the fritters.
Bread crumbs
Absorb moisture and help the cakes hold their shape.
Mashed potatoes
Add softness and moisture, keeping the cakes tender inside.
Eggs
Bind the mixture together so the cakes hold their shape when fried.
Cream
Adds moisture and richness, keeping the interior tender.

The step that matters

Fry the cakes in boiling lard until golden brown. The lard must be hot enough to brown the outside quickly. If the fat is too cool, the cakes absorb grease and turn heavy and soggy before a crust forms.
