Cold Beef with Potatoes

Ingredients

Directions

  1. Remove the meat from the bones and cut it into small pieces.

  2. Crack the bones and place them in a saucepan with salt, covering them with cold water.

  3. Stew the bones until the water is reduced by half, then strain the bones from the gravy.

  4. Return the gravy to the saucepan, season the meat with pepper, salt, and mace if desired.

  5. Add the meat and sliced raw potatoes to the gravy.

  6. Cook over heat until the potatoes are done, then serve.

  7. Optionally, place small squares of toasted bread in the bottom of the dish.
