What each ingredient does

Neck of mutton
Provides the meat and rich fat that flavour the stew as it simmers slowly.
Mealy potatoes
Break down softly during simmering, thickening the broth and giving the stew body.
Onions
Soften and sweeten as they cook, adding savoury depth to the broth.

The step that matters

Simmer gently after boiling. A rolling boil toughens the meat and clouds the broth. Skimming and keeping the liquid at a gentle simmer keeps the mutton tender and the stew clear.

Swap the onion

How well each one fits the dish's main ingredients (mutton, pepper, potato):

  1. Carrotfits better
