What each ingredient does

Mutton
Provides the main meat and rich flavour that the gravy carries.
Butter
Adds fat and richness to the gravy and carries the flour when thickening.
Flour
Thickens the gravy into a smooth, coating sauce when cooked with butter.
Madeira wine
Adds sweetness and aromatic depth to the gravy when stirred in at the end.
Onions
Break down during simmering to add savoury sweetness and body to the gravy.

The step that matters

Thicken the gravy with butter rolled in flour and boil for 1-2 minutes.. Flour must be fully cooked for a minute or two after thickening, otherwise the gravy keeps a raw, pasty taste and may stay cloudy or lumpy.
