Roast Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Season the breast of veal with pepper and coarse sea salt.

  2. Skewer the sweetbread firmly in place and flour the meat.

Roast

  1. Roast the veal slowly in a 350°F (175°C) oven for about four hours, basting with butter.

Make the gravy

  1. When done, put the gravy in a saucepan.

  2. Add a piece of butter rolled in browned flour to the gravy.

  3. If there isn't enough gravy, add a little more water and season with pepper and salt to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal breast
Is the main cut of meat that is slowly roasted and becomes tender.
Flour
Coats the meat and, when browned, thickens the gravy.
Butter
Bastes the meat for browning and enriches the gravy with fat and flavour.

The step that matters

Roast the veal slowly. Slow roasting at moderate heat over several hours lets connective tissue break down gradually, keeping the meat tender rather than dry and tough. Basting with butter adds fat that promotes even browning and moisture on the surface.
