Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Season the sweetbreads with pepper and coarse sea salt, then dust with flour.

  2. Add enough water to create a nice gravy while stewing the sweetbreads.

  3. Butter a pie dish and line it with pie crust.

  4. Place the sweetbreads and some gravy in the dish, then cover with a lid of pie crust, leaving an opening in the center.

  5. Bake in a 400°F (200°C) oven until the crust is brown.

  6. Serve the pie with the remaining gravy in a sauce tureen.
