Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the thick body of the fritters once cooked down with milk and sugar.
Eggs
Egg whites whipped separately add lightness, and the yolks help set the fritters.
Milk
Cooks with the rice to create a soft, creamy base.
Sugar
Sweetens the batter and helps the fritters brown in the pan.
Butter
Fat for frying that browns the outside and adds richness.

The step that matters

Fold in egg whites and beat for 5 minutes. Whipped egg whites trap air that lightens the batter; overbeating or deflating them makes the fritters dense and flat.
