Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. In a bowl, mix the almonds, butter, half of the sugar, cream, and eggs until smooth.

  2. In another bowl, combine all the fruit, add the remaining sugar and Schiedam.

Assemble and bake

  1. Butter a cake mold and layer the almond mixture and fruit alternately until all ingredients are used.

  2. Bake in a moderate oven (350°F / 175°C) for about 2 hours.

Serve

  1. Carefully turn out and serve hot or cold.

What each ingredient does

Sweet almonds
Provide the body and rich, nutty flavor of the pudding.
Eggs
Bind the mixture and set it into a firm, sliceable cake as it bakes.
Butter
Adds richness and a tender crumb to the almond mixture.
Orange marmalade
Adds sweetness, acidity and a bright citrus aroma to the pudding.
Thick cream
Adds moisture and richness, keeping the pudding tender.
Sweet apples
Add moisture and fresh sweetness to the fruit layers.

The step that matters

Layer the almond mixture and fruit alternately. Because the mixture is loose and wet, the layers must be spooned in evenly so the fruit is distributed through the pudding rather than sinking to the bottom while it bakes.

Swap the currant
