Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the eggs until thick and light.

  2. Cut the butter into the Indian meal.

  3. Pour enough boiling water over the mixture to wet it.

  4. Let the mixture cool.

  5. Add the eggs and salt.

  6. Mix the dissolved baking soda into the milk. Add enough milk to create a thick batter.

Bake and serve

  1. Butter square tin pans and fill them about two-thirds full.

  2. Bake in a 400°F (200°C) oven until done.

  3. Cut into squares and serve hot.

What each ingredient does

Indian meal
Forms the body of the cakes and sets as it cooks.
Eggs
Add structure and lift, binding the batter as it sets.
Baking soda
Reacts with the acidic dissolved mixture to produce gas that helps the cakes rise.
Butter
Adds richness and tenderness and helps the cakes brown at the edges.
Milk
Adds moisture and loosens the batter to a thick, pourable consistency.

The step that matters

Let the mixture cool before adding the eggs. Boiling water partly cooks the meal; if the mixture is still very hot when the beaten eggs go in, they can scramble and lose the lift they provide, so the batter may bake up dense.
