Cheese Sotjffle, or Fondu

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. Grate the cheese and place it in an enamelled saucepan.

  2. Add the mustard flour, white pepper, Cayenne, grated nutmeg, butter, baked flour, and milk.

  3. Stir over low heat until smooth and thick, but do not let it boil.

Add the eggs

  1. Remove from heat and add the well-beaten yolks of the eggs.

  2. Beat the mixture for 10 minutes.

  3. Fold in the beaten egg whites until stiff.

Bake and serve

  1. Pour the mixture into a tin or cardboard mold.

  2. Bake in a preheated oven at 400°F (200°C) for 20 minutes.

  3. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air that lifts the soufflé, and yolks enrich the set structure.
Parmesan cheese
Adds rich savoury flavour and fat, and helps the base set firm.
Butter
Adds fat for richness and smooth texture in the base.
Baked flour
Thickens the milk and cheese base so it holds together before baking.
Milk
Provides moisture and a creamy base that the cheese melts into.

The step that matters

Folding in the egg whites. Whites hold air that makes the soufflé rise. Stirring or deflating them vigorously knocks out that air, so fold gently and keep the mixture light.

Swap the white pepper

How well each one fits the dish's main ingredients (cheese, flour, mustard, pepper, nutmeg, butter, milk):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against cheese, flour, mustard, pepper, nutmeg, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
