Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Curry powder
Provides the main spice flavour and aroma of the dish.
Flour
Coats the chicken and helps thicken the sauce as it stews.
Onions
Soften and brown in butter, adding sweetness and depth to the sauce.
Butter
Carries the spices and onions and adds richness for frying.
Chicken
Provides the main protein; browning it adds savoury flavour before stewing.

The step that matters

Stewing with added water. Stewing for 2 to 3 hours breaks down the chicken and lets the flour-thickened sauce develop. Too little water lets it scorch or thicken too far, so water must be added as needed.

Swap the onion

How well each one fits the dish's main ingredients (chicken, flour, butter):

  1. Leekfits better
  2. Potatofits better
  3. Shallotfits about as well
  4. Onionthe original

Fit is the average pairing score against chicken, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
