Muff Bread

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Warm the milk until it melts the butter, but keep it from getting hot.

  2. Gradually mix the flour into the milk to avoid lumps.

  3. Add the egg yolks and the remaining milk.

  4. Fold in the whipped egg whites gently.

Bake

  1. Pour the batter into pie plates, filling them about one third full.

  2. Bake quickly at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while yolks add richness and help set the custard.
Flour
Gives the batter structure as its starch and proteins set during baking.
Milk
Provides the liquid that turns the batter into a moist, custard-like crumb.
Butter
Adds fat for richness and a tender texture.

The step that matters

Fold in the whipped egg whites gently. Whipped whites hold the air that makes the batter rise. Stirring vigorously knocks that air out, so the bread bakes flatter and denser.
