What each ingredient does

Chickens
Provide the meat and bones that flavour the broth and form the stew's body.
Tomatoes
Add acidity and sweetness, and break down to thicken the stew with body.
Butter beans
Add starch and creamy texture that thickens the stew as they cook.
Potatoes
Release starch as they cook, helping thicken the broth.
Corn
Adds sweetness and tender texture to the finished stew.
Butter
Adds richness and fat, rounding out the broth's flavour.

The step that matters

Stir constantly to prevent burning. A stew thick with starch and tomato sticks and scorches on the bottom of the pot, so constant stirring keeps heat even and prevents a burnt taste.
