Why it works: Onion and chicken are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 17,814 recipes. Both carry gamma-nonanolactone, which smells coconut, sweet. The science ↓
Oyster Gumbo
enough for a tureen of soupIngredients
Directions
Make the roux and brown
In a large pot, heat the lard until boiling.
Stir in the flour and cook until it browns well, stirring constantly to prevent burning.
Add the sliced onion and let it brown.
Fry the cut-up chicken in the lard and onion mixture.
Simmer and finish
Add enough water for a tureen of soup and let it cook for five hours.
One hour before serving, add the oysters with their liquor.
Just before serving, stir in the gumbo filee, mixing a small quantity at a time with a cup of the liquid to prevent lumps.
Bring the soup to a boil after adding the filee, then season with salt and pepper to taste.

What each ingredient does
- Flour
- Browned with the lard to form a roux that thickens the soup.
- Lard
- Fat for browning the flour and frying the chicken, carrying flavor through the pot.
- Oysters
- Add briny, delicate seafood flavor, cooked gently at the end so they stay tender.
- Chicken
- Gives meaty body and savory flavor to the long-simmered broth.
- Gumbo filee
- Sassafras powder that thickens the soup and adds its distinctive earthy aroma.
The step that matters
Stirring the filee into the liquid. Filee added to hot liquid all at once clumps and turns stringy. Mixing it in small amounts with a cup of liquid first disperses the powder evenly, keeping the soup smooth.
