Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Shad Roe Croquettes
Ingredients
Directions
Place the shad roes in a pan of salted boiling water, cover, and simmer for 15 minutes.
Remove the skins and mash the roes.
In a saucepan, bring the cream to a boil.
Mix the butter and flour together over low heat, but do not brown.
Add the cream to the butter and flour mixture, stirring until it thickens to a custard.
Incorporate the mashed roes, egg yolks, nutmeg, lemon juice, chopped parsley, pepper, and salt into the custard.
Spread the mixture on a dish to cool.
Once cooled, shape the mixture into croquettes.
With floured hands, dip each croquette in egg whites and then coat with bread crumbs.
Let the croquettes rest for two hours before frying.
