Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour and the bulk of the filling.
Butter
Enriches the sauce and adds richness and flavour to the filling.
Flour
Thickens the butter and milk mixture so the filling can hold its shape.
Milk
Adds moisture and creaminess to the thickened base.
Hard-boiled eggs
Add body and a firm, creamy texture to the filling.
Eggs
Beaten eggs bind the bread crumb coating and help it adhere during frying.

The step that matters

Let the mixture cool. A cooled, thickened filling holds its shape when formed. If it is still warm and soft, the croquettes can slump or split and fall apart in the hot fat.

Swap the onion

How well each one fits the dish's main ingredients (oyster, butter, flour, milk, pepper, nutmeg, parsley):

  1. Shallotfits better
  2. Potatofits better
