Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provide the meat and, through long boiling, the bones that release the gelatin for the jelly.
Hard boiled eggs
Add body and a firm, sliced texture to the set mixture.
Lemon
Adds acidity and fresh aroma that balance the rich, spiced meat.
Catsup
Adds sweetness and acidity along with a tomato-based color and flavor.

The step that matters

Boiling the bones to make the jelly. The bones must simmer long enough to draw out collagen, which turns into gelatin as the broth cools. Without enough gelatin the mixture will not set firmly when chilled.

Swap the mace

How well each one fits the dish's main ingredients (chicken, allspice, clove, egg, lemon):

  1. Nutmegfits better
  2. Thymefits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against chicken, allspice, clove, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
