What each ingredient does

Spring chicken
Provides the meat that is browned first and then simmered in the sauce.
Madeira
Reduced to concentrate its sweet, nutty flavour into the sauce.
Cream
Adds richness and body, helping the sauce turn smooth and velvety.
Terrapin butter
Adds fat and rich buttery flavour to the sauce.
Shallots
Cooked until soft and yellow, adding a mild, sweet aromatic base.
Chicken stock
Supplies liquid that carries flavour and keeps the chicken moist as it cooks.

The step that matters

Reduce the Madeira until nearly dry. Reducing concentrates the wine's sugars and flavour compounds. Stopping too early leaves a thin, harsh-tasting base, while over-reducing can make the sauce too strong.

Swap the tarragon
